Recipe: Quick & Easy Boston Cream Pie Poke Cake!

This recipe is one of my favorites!  It's not very healthy, but it's perfect for a little slice to treat yourself.  And it's great for company because you can make it very quickly and it's delicious.  You can make it healthier by making your own cake, pudding and frosting, but the easiest and quickest way is below (and it's delicious just like this!)

* 1 box Vanilla cake mix
* 1 box Vanilla Instant Pudding
* 1 container Chocolate Frosting
Ingredients to prepare the above cake mix and pudding.  This is usually eggs, water, vegetable oil and milk.

Make the cake according to the directions on the box.  Bake it and let it cool.  When it's cool, use the back end of a wooden spoon to poke a bunch of holes in the cake.  It should look like this:

Then make the vanilla pudding according to the directions on the package and immediately pour and spread it over the cake.  Now it should look like this:

Put it in the fridge for a while until the pudding sets a bit.  I left it in the fridge for about 30 minutes.

Then frost it.  This is the hard part because the frosting doesn't spread easily over the pudding.  I put a few blobs of frosting down on various parts of the cake and connected them and spread it out as best I could.  Here's what the finished product looks like.  Not too pretty, but trust me it's delicious!!
